Summer Time!

My freezer is almost empty and I am really looking forward to trying some new summer time friendly meals!  I also have some baby friendly meals to share that have been tested on my little guy :)

Yummy Meatballs!

Break out your best spahetti sauce for these easy meatballs!

Ingredients


1 egg
1/2 cup (125 mL) grated onions
1 large clove of garlic, minced
1/4 cup (60 mL) dry breadcrumbs
1/4 cup (60 mL) grated Parmesan cheese
1/2 tsp (2 mL) dried basil
1/2 tsp (2 mL) dried oregano
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) pepper
1 lb (454 g) lean ground beef 


Preheat oven to 400°F.

In bowl, beat egg; mix in onion, garlic, bread crumbs, cheese, basil, oregano, salt and pepper.

Mix in beef; shape into balls. Bake on foil-lined baking sheet in 400°F oven until firm, about 10 minutes.

Let the meatballs cool.  You can freeze them with sauce or you can freeze them alone in a freezer bag.

Let meatballs defrost.  Cook with your sauce. 

Easy Yummy Pizza

We enjoy this freezer meal a couple different ways.  We either will have it on premade pizza crust from Costco or we like to have the pizza on pitas.  Both freeze well.

Ingredients

Pizza crust or pita
Your fav pizza sauce
Fav pizza toppings (ham, pepperoni and bacon)
Cheese

Assemble the pizzas how you like them.

Place on a baking sheet and flash freeze.  Once hard, wrap each pizza in parchment paper to stop it from getting freezer burn.  Place all the pizzas in to freezer bag.

Preheat the oven to 350ºF and place the pizza in the oven and bake about 30 minutes.
