I can not remember where I got this recipe from but it was so good and the chicken was juicy! The best thing about the chicken is it really goes with any side dish!
All you have to do is dip the chicken in ranch dressing, then coat with bread crumbs. Put the chicken on a baking sheet and flash freezer. Once frozen, package into freezer bags.
Day of cooking, defrost as you normally would and bake on baking sheet at 350 for approx 35 min.

Chicken with Dijon Glaze
Tonight for dinner was a recipe that came from Pinterest. It was really good. I found the balsamic vinegar to be a bit over powering. The only thing I would change to this recipe is the amount of balsamic vinegar. I served it with twice baked potatoes and green beans. Yum!

Toddler Friendly Chicken Quesadilla
I have pinned a couple of quesadilla recipes for my little guy to try out. I finally had some left over chicken from dinner last night. I wasn't sure if he would like the avocado/salsa combo but he ate everything today for lunch. I am going to take that as a sign that he likes it :)
Ingredients
1 avocado
1 cup of salsa
Cooked chicken
Shredded cheese
Wraps
Spoon the avocado into a bowl. Take a fork and soften so you can spread it on to the wraps. Once soften, add the cup of salsa (you can add more to your taste) and mix together.
Once mixed together start assembling the quesadilla. I layer mine as follows, avocado/salsa, cheese and then chicken. Fold in half and place on baking sheet. Once ready, place all quesadilla on to the baking sheet and put into freezer to flash freeze. Once frozen, place into large freezer bags.
I dont wrap mine again as we go through them pretty fast and keep well in just the freezer bag.

Defrost and cook in panini grill.

Toddler Freezing Tips
For the past couple weeks I have been making freezer meals for my little guy (stews, chicken meals, etc) I started freezing in muffin tins to get the right meal portion size for him. However, I found after I would flash freeze in the tins, it was hard to get out. Well I was out getting groceries, it came to me, duh, by small freezer sized bags!
So my tip for freezing for little ones, to get the prefect meal size, freeze in the small freezer bags :)

Looks like I took most of the summer off from blogging.
I am not sure if some of you know but on top of working full time, I also am a photographer and the summer months have been busy :) And when we have a free weekend we are either working on renovating the house or out enjoying the nice weather.
Now that we are at the end of the summer time, I am stocking my freezer again! I have lots of new recipes that I will be posting that are toddler friendly :)

Summer Time!
My freezer is almost empty and I am really looking forward to trying some new summer time friendly meals! I also have some baby friendly meals to share that have been tested on my little guy :)
Yummy Meatballs!
Break out your best spahetti sauce for these easy meatballs!
Ingredients
1 egg
1/2 cup (125 mL) grated onions
1 large clove of garlic, minced
1/4 cup (60 mL) dry breadcrumbs
1/4 cup (60 mL) grated Parmesan cheese
1/2 tsp (2 mL) dried basil
1/2 tsp (2 mL) dried oregano
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) pepper
1 lb (454 g) lean ground beef
Preheat oven to 400°F.
In bowl, beat egg; mix in onion, garlic, bread crumbs, cheese, basil, oregano, salt and pepper.
Mix in beef; shape into balls. Bake on foil-lined baking sheet in 400°F oven until firm, about 10 minutes.
Let the meatballs cool. You can freeze them with sauce or you can freeze them alone in a freezer bag.

Let meatballs defrost. Cook with your sauce.

Easy Yummy Pizza
We enjoy this freezer meal a couple different ways. We either will have it on premade pizza crust from Costco or we like to have the pizza on pitas. Both freeze well.

Super Mac and Cheese
I was excited when I saw this recipe. It is easy to hide some great veggies for those picky eaters. It also freezes well. My little guy has had 2 so far this week :P
I didnt have any pumpkin on hand. I used some frozen pureed sweet potato or butternut squash. I aslo included some cauliflower into the mix :)
Once the pasta mixture is ready, I divided the mixture into muffin tins. Once frozen, pop out of tin and place into freezer bags.

Meat Loaf
As I mentioned in my other post, tonight I did some freezer cooking for my little man. It included yummy meat balls and meat loaf. My husband liked the meat loaf so much, he wants some for his work lunch (and he doesnt take a lunch to work, lol)
Ingredients

Defrost and warm up in the oven.
Ingredients
1 pound ground beef
2 cups grated carrot or other root vegetable (I used sweet potatoe and carrots)
1.5 cups bread crumbs
1 egg
Preheat the oven to 350ºF.
Combine all ingredients in a large bowl. Press gently into greased muffin cups. Bake until no longer pink about 30 minutes for muffins.
Let the muffins cool and place in ziplock bags to freeze.

Week Update!
I am finally getting back on track with my eating habits. This week we had the following freezer meals: roast, spaghetti sauce and tonight was tacos! The time that I saved with meal prep I was able to do some cooking tonight. I made some yummy meals for my little guy to keep in the freezer for quick meals on the go! Recipes to come :)

Chicken Wings
It has been some time since I have blogged. Lots has been going on. Vacation, going back to work and getting ready for my littles guys first birthday!
We love chicken wings at home and it took some time for me to find a baked recipe at home. This one is a big hit with our family and friends! I find that Costco is cheaper for chicken wings. They also come prepared so I dont have to do any extra cutting of the wing.
Ingredients
3 lbs chicken wings
salt
fresh ground pepper
2 cups tangy barbecue sauce
To Prepare for Freezing
Preheat the oven to 375 degrees.
Season the chicken wings on both sides with salt and pepper. Set them in a single layer in a large roasting or baking pan. I line my pan with foil. Bake the chicken wings, turning once, until browned, about 45 minutes.
Let wings cool. Put into freezer bags.
Cooking Directions from Freezer
Take wings out and defrost. Pour the barbecue sauce over the chicken wings and bake in oven at 350. Bake for 10 minutes. Turn the wings over and bake 10 minutes longer.

Turkey Slow Cooker Soup - Freezer Friendly!
I love it when I get to make a turkey! It means I get to have left overs for soup :)
Ingredients
1 turkey carcass, broken into several pieces
8 cups or water or brooth
1 teaspoon salt
1/4 teaspoon pepper
1 onions, chopped
2 celery ribs, chopped
1 carrots, peeled and chopped
2 tablespoons parsley, fresh chopped
1/2 teaspoon dried marjoram
1 bay leaves
6 ounces noodles, cooked and drained
To Prepare for Freezing
Combine turkey carcass and water in crock pot. Add salt, pepper, onion, celery, carrots, parsley, marjoram, and bay leaf. Cover and cook on LOW 5-6 hours. Remove carcass and bay leaf from cooker. Take meat off bones and return meat to broth. Discard bones and bay leaf.
Let cool and place into freezer bags.
Cooking Directions from Freezer
Defrost. Add cooked noodles to the pot. Warm up soup and then serve. You might have to add a bit of extra water.

Baked Ziti
Life has been so busy that I havent gotten around to blogging. I have to be honest, I havent been eating too much from my freezer (bad!)
I was really excited to try this recipe. I was really disappointed with the results but my husband said he really enjoyed the dish. So I decided to blog to see what other people might think of it :)
Ingredients
1 pound dry ziti pasta
1 onion, chopped
1 pound lean ground beef (season with pepper, garlic powder, onion powder, and minced garlic)
2 (26 ounce) jars spaghetti sauce (I added a zucchini to my sauce just for more veggies!)
8 slices provolone cheese
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese
To Prepare for Freezing
Cook pasta until al dente, about 7-8 minutes; drain and set aside. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
Layer the pan as follows: 1/4 of the ziti, 1/4 of the sauce, 4 slices of Provolone cheese, 1/4 of ziti, 1/4 mozzarella cheese and 1/4 of sauce mixture. Top with grated Parmesan cheese and remaining mozzarella cheese.
Cooking Directions from Freezer
Defrost in fridge. Preheat over to 350. Bake covered for 30 minutes in the preheated oven, or until cheeses are melted.

Balsalmic BBQ Chicken
Lately I have been craving balsalmic vinegar. So off I went to see what I could try since I had lots of chicken to use up. I combined a couple of different recipes to get this one! I think next time I will not add as much vinegar as it was a bit tangy.
Ingredients
1/2 cup balsalmic vinegar (I would try 1/3 cup)
1/2 BBQ sauce
1 garlic clove, minced
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1/2 tsp salt
1/2 tsp pepper
1/3 cup brown sugar
To Prepare for Freezing
Mix everything together in a bowl. Place chicken into freezer bag. Pour mixture into bag. Rub chicken to ensure it is covered.
Cooking Directions from Freezer
Defrost. Place chicken into baking dish with mixture. Bake 375 of 35 mins.

Shepherds Pie
Another freezer friendly meal! Great on cold days. I love comfort food :) I normally make mine in a large 8x8 freezer dish. However, I have noticed we have too many left overs. Since we are a small family (myself, hubby and a 10 month old) I think I will be making smaller sizes. From one package of beef I will be able to get 4 small meals with left overs for lunch.
Ingredients
Ground Beef
Diced Onion
Peas and Corn (I use frozen)
Mashed Potatoes
Gravy
To Prepare for Freezing
Brown the beef with onions and season with pepper. I dont season much of my meals with salt. Once brown, add gravy and mix together. Grab freezer friendly dish. Evenly spread out the beef mixture. Top beef mixture with peas and corn. Then top with mashed potatoes. Sprinkle with cheese. Put on the lid and freeze :)

This was a new recipe that I added to my freezer list. I have to say that when I put it into the oven I wasnt 100% if it was going to turn out. It just didnt look great at all. But I gave it a go and it wasnt too bad! I think next time I am going to precook my chicken. I wanted to add that the breading on the chicken wasnt soggy and was a bit crispy!
Also note that I know I havent been putting in measurements in my recent recipes. I wing most of my recipes. The amount you use will depend on how many meals you are making.

To Prepare for Freezing
Bread the chicken. Take a couple tablespoons on tomatoe sauce and place on the bottom of your freezer dish. Place chicken on top. Top with remaning sauce and sprinkle with cheese. Cover the dish and freeze.

I love having easy freezer meals for when I am in a rush. I am able to cook from frozen in my panini grill. They are a great idea for lunch.
Ingredients
Large flour tortillas
Grated cheese
Salsa
Chicken
To Prepare for Freezing
Cook the cubed chicken in fajita seasoning. Take a tortialla and top with a table spoon of salsa. Add grated cheese and chicken. Fold over to close the quasdiala.
Place quasdialas on a baking sheet and flash freeze. Once frozen, wrap each quasdiala in plastic wrap and place into a freezer bag.
Cooking Directions from Freezer

Repeat!
No new recipes tonight! For dinner we had chicken souvlaki. I had to go to the store to get some stuff for dinner and found that chicken was on sale! I will be stocking my freezer up again with some new and yummy chicken freezer meals!
Roast beef was on a great sale. I bought 2 large roasts for $24. I cut them up into 6 dinner size roasts. I bagged them into freezer bags so I am able to take them out for single meals. I love cooking my roast in the slow cooker.

Chicken Stir Fry
Dinner tonight was chicken stir fry. It is the same recipe below, just with chicken :) It was a quick and yummy dinner to make!

Garlic Bread
Garlic bread is great to have on hand to add to any meal. It is easy to make for the freezer and tastes so good!
Garlic Bread
Ingredients
1 long loaf French bread
Garlic Butter
Cheese
Bacon Bits
To Prepare for Freezing
Slice bread lengthwise leaving one side intact. Butter each side the bread with the garlic butter (I buy premade)
Sprinkle with cheese and bacon bits to taste over both sides of the bread. Close the loaf. Wrap loaf in tin foil.
Cooking Directions from Freezer
Take bread out to defrost.
Preheat oven to 400 degrees. Open up the bread so the cut sides are exposed and cook for approximately 15 more minutes. Or until the cheese is melted. Cut and serve.

Spaghetti Sauce
Sorry I have been MIA. I was away for a couple of days.
Tonight for dinner we had another staple in our freezer, spaghetti sauce! I normally will make a large pot and have about 10 freezer meals. Please note that the recipe below is for one meal. I use 3 large size cans of crushed tomatoes and wing the rest. We also add lots of veggies! Adding red wine to the sauce gives it a nice taste.
I also will serve this meal with garlic bread from the freezer :P
Spaghetti Sauce
Ingredients
4 tbsp olive oil
1 large onion, diced
1 large red pepper, diced
4-6 cloves of garlic, minced
1 pound ground beef
3 cans crushed tomatoes
1 can tomato paste
3 tbsp oregano
3 tbsp basil
salt
pepper
bay leaf
dried chili flakes to taste
sugar to taste
To Prepare for Freezing
Prep your veg while your pot heats with the olive oil in it. Add the veg with a bit of salt and cook until the onion is translucent. Then add the garlic and stir for another minute or two. Throw in the ground beef and cook till brown.
Then add the crushed tomatoes and tomato paste. Stir. Add oregano, basil, black pepper, dried chili flakes and bay leaf.
Bring to a boil then simmer for at least an hour. Taste the sauce. Now is the time to decide how much sugar you need to add to balance the acidity of the tomatoes.
It's different every time but I usually add at least a couple teaspoons. I usually also adjust the salt now.
Allow to cook for another 30 minutes and taste test again.
Let the sauce cool. When cool place serving amount you want into freezer bags. Lay flat to freeze.

Let defrost and warm up in pot on the stove. Serve over noodles.

Classic Onion Soup
This is yet another recipe that is a staple in our freezer! It is great on cold days like today :) We normally get about 6 meals.
Classic Onion Soup
Ingredients
4 large yellow onions, sliced
6 tbsp butter or margarine
1 tbsp sugar
8 cups reduced sodium chicken broth
1/2 cup red wine
Salt and Pepper to taste
To Prepare for Freezing
Melt butter in large saucepan. Add onions. Cook over medium heat for 12 minutes or until tender and golden. Stir often. Add sugar and cook, stirring, for 1 minute. Add broth. Cover and bring to a boil. Reduce heat and simmer 12 minutes. Add red wine and give a stir. Season salt and pepper.
Let cool and put into freezer bags. Lay flat in freezer.

Once soup is defrost, heat up in pot. Top with toast and sprinkle with cheese.

Beef Stir Fry
This was something that I put together and is a new recipe for this round of freezer meals.
Beef Stir Fry
Ingredients
Cut up fast fry steak
Stir fry veggies (I bought the fresh package ones from Independent)
One jar of teriyaki sauce
To Prepare for Freezing
Place the stir fry veggies into a large freezer bag. In another freezer bag place beef and pour the jar of teriyaki sauce ontop of the beef. Package together and then freeze.
Cooking Directions from Freezer
Once defrosted, place the beef mixture into frying pan. Fry till beef is done. Add veggies and cook till crisp. Serve over a bed of rice.

Meat Pie
Last night for dinner was meat pie. This is a staple in our freezer. I normally will double the recipe. I get about 3-4 meat pies for the freezer.
I use the following recipe from the LCBO but I did make some small changes.
Ingredients
1 tbsp (15 mL) canola oil
1 lb (500 g) lean ground pork ( I add a pound of beef)
½ cup (125 mL) finely chopped onion, about 1 small yellow onion
1 large garlic clove
1 stalk celery, finely diced
1 small carrot, finely diced
1 tsp (5 mL) chopped fresh thyme or ¼ tsp (1 mL) dried
¼ tsp (1 mL) salt
¼ tsp (1 mL) ground cloves
¼ tsp (1 mL) dried summer savoury
¼ tsp (1 mL) freshly ground black pepper
¾ cup (175 mL) turkey, chicken or beef stock
2 tbsp (25 mL) finely chopped fresh parsley
2 to 3 tbsp (25 to 45 mL) Dijon mustard
1 cup of bread crumbs
Premade pastry pie shells
When ready to serve, press cooled tourtière mixture into premade pastry pie shell. Place in freezer bag.

Stir in thyme, salt, cloves, savoury, black pepper and stock. Cover, reduce heat to low and simmer 20 minutes. Then stir in bread crumbs and parsley; remove from heat. Cool until able to handle.
When ready to serve, press cooled tourtière mixture into premade pastry pie shell. Place in freezer bag.

Once defrosted, cook at 350 for about an hour.

Freezer Inventory
I know I am posting a couple recipes at a time but I thought I would share with you what I did in my last freezer meal cooking. Some of the recipes are made almost fully. They are then frozen and will only need a small amount of cooking time when defrosted.
I also tried some new recipes were the meals are made with out cooking and frozen. But the good thing is, they will be ready to go and will require little prep and cooking time. Some of the meals can also be placed directly into the slow cooker.
Generally when I make my meals, I will have enough for 2-3 freezer meals.

BBQ Pork
Today's freezer dinner was a new recipe. It was very easy to prep and cook. Very tasty as well. This will be added to future freezes.
BBQ Pork Chops
Ingredients
BBQ Sauce
Pork Chops
To Prepare for Freezing
Place all ingredients in freezer bag. Make sure pork chops are covered with sauce.
Cooking Directions from Freezer
Defrost pork chops. Place chops and sauce in baking dish. Bake in oven at 350 for about 35 minutes or until fully cooked.

Chicken Bacon Sub
I had to try this recipe when I first saw it. Who doesnt like chicken and bacon? Yum! This was a good and quick dinner if you are on the go. I think next time I will try to heat mine up on the panini grill.
You will need to use the shredded chicken recipe that I posted the other day.
Shredded Chicken Recipe
Chicken Bacon Swiss Cheese Sub Recipe
1 large French loaf, sliced lengthwise
1/2 cup garlic butter (I used store bought and only enough to cover the bread)
2 cups shredded chicken
1/4 cup chopped bacon, cooked crisp
4 slices swiss cheese
To Prepare for Freezing
Place French loaf on large sheet of aluminum foil. Spread garlic butter on bottom half of bread. Spread shredded chicken across garlic butter. Sprinkle with bacon. Layer cheese over top. Place top half of bread over cheese. Wrap in foil and freeze.
We had a long loaf and managed to get three subs.
Cooking Directions from Freezer
Turn oven on to 350. Bake for 50-70 minutes if frozen. If thawed, bake for 25-30 minutes.

Chicken Souvlaki
I am not sure if this is a "traditional" souvlaki. I got this recipe a couple years ago when I did the South Beach Diet. This one was always a fav in our house and is really easy to make. This is the first time we made it from frozen and it was really good. I will be adding this one to my standard recipes for freezing.
Ingredients
4 chicken breasts cubed
1/4 cup light soy sauce
1/4 cup extra virgin olive oil
3 cloves minced garlic
1 tsp dried oregano
Juice of one lemon
To Prepare for Freezing
Mix all ingredients excluding chicken in a bowl. Place chicken in a small freezer bag. Pour mixture on top. Place in freezer.
Cooking Directions from Freezer
Defrost in fridge in the freezer bag. Cook in frying pan until chicken is cooked. We serve with rice and green beans.

I started freezer cooking about 2 years ago. I was having a hard time eating home cooked meals. I lived about an hour away from work and the last thing I wanted to do when I got home was prep and cook dinner. I learned about freezer cooking from a friend. I had first tried a couple of recipes and once I saw how easy it was, I was hooked!
Recently I did a round of freezer cooking and I have about 60 meals to eat. This has been my largest freeze to date. Most of them are tried and tested meals but I did try some new recipes.
This blog I will share my recipes, cooking methods and reviews of the recipes in my freezer.
